We are delighted to announce two Academic Theme Leads for one of our 2025 priority themes, food.
Rachel Norman is Chair in Food Security & Sustainability at the University of Stirling. Rachel brings a deep knowledge of global food security, the complexity of food systems in Scotland and beyond. In particular, Rachel leads on mapping out Scottish research capacity and excellence to develop a database of experts, case studies and best practices. Rachel’s personal research interests are in trade offs and feedback loops in food systems and the role local food growing can play in community wealth building, the circular economy and achieving net zero.
Baukje de Roos is Professor of Nutrition at the Rowett Institute, University of Aberdeen. Baukje is an internationally recognised nutrition scientist with over 25 years of experience in the design and delivery of dietary intervention studies to assess how nutrients, foods and diets affect cardiovascular health outcomes and resilience to disease development. Baukje has developed a food swap app to identify where altering diets can have the most the most climate-friendly impact. Baukje brings extensive connections in government and industry to Scotland Beyond Net Zero.
Baukje and Rachel will be working alongside our steering group, and with academics across our member universities and beyond to build external partnerships and academic collaborations.
